Delicious and hearty and full of superfree foods.<\/span><\/p>\n\n\n\n<p><strong><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Ingredients<\/span><\/strong><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">1 onion, finely chopped <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">3 cloves of garlic, crushed <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">4 slices of back bacon, chopped and all fat removed<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">1 yellow pepper, finely chopped<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">1 courgette, finely chopped<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">1 carrot, finely chopped<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">200g of cherry\/grape tomatoes, halved<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS';\"><span style=\"font-size: small;\">2 cups (480ml) of TruRoots Sprouted Bean trio, rinsed (or use a dried white bean - haricots are good) <strong>* see note below<\/strong><\/span><\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">3 cups (720ml) of passata <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">4 cups (960ml) of vegetable stock <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">2 tablespoons of tomato paste <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS';\"><span style=\"font-size: small;\">\u00bc cup (60ml) of maple syrup<\/span><\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">2 tablespoons of balsamic vinegar <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">1 tablespoon of paprika <\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">salt and black pepper<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Olive oil spray<\/span><\/p>\n\n\n\n<p><strong><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">NOTE: if not using the sprouted bean trio, I recommend soaking any dried beans you use over night.<\/span><\/strong><\/p>\n\n\n\n<p><strong><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Directions<\/span><\/strong><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Spray a large casserole (oven proof) dish over a medium high heat with olive oil spray. Add the onion, garlic and bacon and cook until slightly golden<\/span><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0713.jpg\" alt=\"DSC_0713\" title=\"DSC_0713\"\/><\/figure>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\"><\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Add the pepper, courgette, carrot and tomatoes and cook for a further 5 mins<\/span><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0717.jpg\" alt=\"DSC_0717\" title=\"DSC_0717\"\/><\/figure>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\"><\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Add the remaining ingredients, season with salt and black pepper and bring to a boil<\/span><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/06\/DSC_0723.jpg\" alt=\"DSC_0723\" title=\"DSC_0723\"\/><\/figure>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\"><\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">In the meantime preheat oven to 150c or 300f (gas mark 2)<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">Cover with lid, place in oven and bake for approx 4 hours. Check a few times through cooking to make sure they don't dry out too much, in which case you may need to add a bit more liquid.<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">This recipe is great served on it's own or as a meal accompaniment.<\/span><\/p>\n\n\n\n<p><span style=\"font-family: 'Trebuchet MS'; font-size: small;\">This recipe can also be done in a slow cooker, however I recommend reducing the liquid measurements.
