font-family: 'Trebuchet MS';\">1 cup (240ml) of black beans (tinned)<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 cup (240ml) of frozen sweet corn<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 potato, peeled and chopped<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">3 tablespoons of tomato paste<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 teaspoon of chilli powder<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 teaspoon of ground cumin <\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 teaspoon of ground coriander<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">1 teaspoon of paprika<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">freshly chopped coriander<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">3 eggs<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">salt and pepper to season<\/span><\/p>\n\n\n\n<p>Spray oil<\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">* I finely chop my vegetables in a mini food processor<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\"><strong><span style=\"text-decoration: underline;\">Method<\/span><\/strong><\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">Add the lentils to a saucepan of boiling hot water (480ml) and simmer until softened, drain and set aside.<\/span><\/p>\n\n\n\n<p><span style=\"font-size: small; font-family: 'Trebuchet MS';\">Once cooled add the eggs and fresh chopped coriander and mix well.
