{"id":4647,"date":"2012-04-29T18:27:29","date_gmt":"2012-04-29T22:27:29","guid":{"rendered":"https:\/\/www.slimmingeats.com\/blog\/?p=4647"},"modified":"2026-02-25T13:24:29","modified_gmt":"2026-02-25T18:24:29","slug":"lentil-shepherds-pie","status":"publish","type":"post","link":"https:\/\/www.slimmingeats.com\/blog\/lentil-shepherds-pie","title":{"rendered":"Lentil Shepherds Pie"},"content":{"rendered":"\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0198.jpg\" alt=\"DSC_0198\" title=\"DSC_0198\"\/><\/figure>\n\n\n\n<p><span style=\"font-size: xx-small;\"><span style=\"font-weight: normal;\"><span style=\"font-size: x-small;\"><span style=\"font-size: small;\"><span style=\"font-family: 'Arial Black'; font-size: medium;\"><\/span><\/span><\/span><\/span><\/span><\/p>\n\n\n\n<p><span style=\"font-size: xx-small;\"><span style=\"font-weight: normal;\"><span style=\"font-size: x-small;\"><span style=\"font-size: small;\"><span style=\"font-family: 'Arial Black'; font-size: medium;\">Lentil Shepherds Pie<\/span><\/span><\/span><\/span><\/span><\/p>\n\n\n\n<p><span style=\"font-size: xx-small;\"><span style=\"font-weight: normal;\"><span style=\"font-size: x-small;\"><span style=\"font-size: small;\"><em>Slimming Eats Recipe<\/em><\/span><\/span><\/span><\/span><\/p>\n\n\n\n<p><strong><span style=\"font-size: small;\">Serves 4<\/span><\/strong><\/p>\n\n\n\n<p><span style=\"font-size: x-small;\"><span style=\"font-family: trebuchet ms;\"><span style=\"font-size: x-small;\"><span style=\"font-size: x-small;\"><span style=\"font-size: x-small;\"><span style=\"font-size: small;\"> <\/span><\/span><\/span><\/span><\/span><\/span><strong><span style=\"text-decoration: underline;\">Ingredients<\/span><\/strong><\/p>\n\n\n\n<p>1 cup of uncooked brown lentils, rinsed<\/p>\n\n\n\n<p>1 onion, finely chopped<\/p>\n\n\n\n<p>2 cloves of garlic, crushed<\/p>\n\n\n\n<p>2 carrots, finely chopped<\/p>\n\n\n\n<p>1 courgette (zucchini) finely chopped<\/p>\n\n\n\n<p>\u00bd cup of frozen peas<\/p>\n\n\n\n<p>\u00bd cup of frozen sweetcorn<\/p>\n\n\n\n<p>sprinkling of thyme<\/p>\n\n\n\n<p>1 teaspoon of paprika<\/p>\n\n\n\n<p>balsamic vinegar<\/p>\n\n\n\n<p>2 bay leaves<\/p>\n\n\n\n<p>3 cups (720ml) of vegetable stock<\/p>\n\n\n\n<p>2 heaped tablespoons of tomato paste<\/p>\n\n\n\n<p>salt and black pepper to season<\/p>\n\n\n\n<p>2 large sweet potatoes, peeled and chopped<\/p>\n\n\n\n<p>120g of cheddar cheese<\/p>\n\n\n\n<p>Olive oil spray<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Method<\/span><\/strong><\/p>\n\n\n\n<p>Spray a large pot with some Olive oil spray, add the onions and garlic and cook until softened.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0064.jpg\" alt=\"DSC_0064\" title=\"DSC_0064\"\/><\/figure>\n\n\n\n<p>Add the carrots, courgette and thyme and cook for a further 5 mins<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0068.jpg\" alt=\"DSC_0068\" title=\"DSC_0068\"\/><\/figure>\n\n\n\n<p>Stir in the lentils, tomato paste and paprika to evenly coat.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0072.jpg\" alt=\"DSC_0072\" title=\"DSC_0072\"\/><\/figure>\n\n\n\n<p>Pour in the stock and add a splash of balsamic vinegar and the bay leaves, then bring to a boil and cover and simmer for 1.5 hours.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0077.jpg\" alt=\"DSC_0077\" title=\"DSC_0077\"\/><\/figure>\n\n\n\n<p>Stir in the peas and sweetcorn<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/04\/DSC_0141.jpg\" alt=\"DSC_0141\" title=\"DSC_0141\"\/><\/figure>\n\n\n\n<p>When lentils are almost finished cooking time. Add your sweet potato to a pot of boiling hot water and simmer till softened. Then mash, season with some salt and black pepper and set aside.<\/p>\n\n\n\n<p>Preheat oven to 200c or 400f (gas mark 6)<\/p>\n\n\n\n<p>Layer your lentil mixture into an oven proof title=\"DSC_0147\"\/><\/figure>\n\n\n\n<p>Spread over the mashed sweet potato and sprinkle with your grated cheese.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\"
