However adding the mushrooms and parmesan to these chicken meatballs, keeps them juicy and moist in the amazing rich onion sauce.<\/p>\n\n\n\n<p>I oven bake these Mushroom and Parmesan Chicken Meatballs for first and then finish them off in the sauce. You can finely chop with a knife though if you don't have something similar. I find for fussy kids the chopping really fine means I can hide the mushrooms in the meatballs without them even realizing.&nbsp;<\/span><\/span><\/p>\n\n\n\n<p>I also blend the gravy once it has been simmered in the&nbsp;<em><strong><a style=\"color: #874149;\" href=\"http:\/\/amzn.to\/2jkL2ST\" target=\"_blank\" rel=\"noopener noreferrer\">Nutri Ninja Food Blender&nbsp;with Auto IQ technology<\/a><span style=\"color: #874149;\">&nbsp;<\/span><\/strong><\/em>too, before adding it back to the pan, it makes the gravy lovely a smooth. A stick blender should work fine though.<em><strong><span style=\"color: #874149;\">&nbsp;<\/span><\/strong><\/em><\/p>\n\n\n\n<p>I like to serve these Mushroom and Parmesan Chicken Meatballs with these&nbsp;&nbsp;<span style=\"color: #874149;\"><strong><a style=\"color: #874149;\" href=\"https:\/\/www.slimmingeats.com\/blog\/syn-free-mashed-potatoes\" target=\"_blank\" rel=\"noopener noreferrer\"> Mashed Potatoes<\/a><\/strong><\/span> - which go perfectly with the yummy gravy. I have done them both ways in the past. data-step-index=\"4\" id=\"mv_create_682_5\">Form into \u00a024\u00a0meatballs and place\u00a0on a baking tray lined with parchment paper<\/li><li data-step-index=\"5\" id=\"mv_create_682_6\">Spray over the top with spray oil<\/li><li data-step-index=\"6\" id=\"mv_create_682_7\">Bake for 12 minutes<\/li><li data-step-index=\"7\" id=\"mv_create_682_8\">Remove and set aside<\/li><\/ol><p><strong>For the Sauce:<\/strong><\/p><ol><li data-step-index=\"8\" id=\"mv_create_682_9\">Spray a deep frying pan with some spray oil, add the onion and fry to soften for approx 5 mins.<\/li><li data-step-index=\"9\" id=\"mv_create_682_10\">Add the garlic and thyme, balsamic vinegar and a little bit of the stock and continue to fry until the stock reduces down and the onions are nice a caramelized.<\/li><li data-step-index=\"10\" id=\"mv_create_682_11\">Add the tomato paste and remaining stock, bring to a boil and simmer for 20 mins.<\/li><li data-step-index=\"11\" id=\"mv_create_682_12\">Add the gravy\u00a0to a blender and blend till smooth<\/li><li data-step-index=\"12\" id=\"mv_create_682_13\">Pour the gravy back into the frying pan, and add the
