It's always handy to have a big bag of lentils in your cupboard. They are high in protein and a great source of fibre too. I am a sucker for throwing in any ingredients I have on hand and using up any veg that's lurking in the fridge. Things that would normally take <\/em><em>hours can be cooked in minutes.
