It's filling and really delicious. I like to serve with some Canadian Peameal Bacon, but regular back bacon is fine too. id=\"mv_create_734_2\">Spray a frying pan over a medium heat with some spray oil, Add the onion and fry &nbsp;golden.<\/li><li data-step-index=\"2\" id=\"mv_create_734_3\">Add the garlic and tomatoes and cook till the tomatoes start to break down.<\/li><li data-step-index=\"3\" id=\"mv_create_734_4\">Add the splash of balsamic vinegar, tomato paste and a little stock (just enough to make saucy)<\/li><li data-step-index=\"4\" id=\"mv_create_734_5\">Bring to a boil and simmer, until it all thickens into a sauce.<\/li><li data-step-index=\"5\" id=\"mv_create_734_6\">Stir in the spinach till wilted.<\/li><li data-step-index=\"6\" id=\"mv_create_734_7\">Divide the tomato and spinach mixture between two ramekin<\/li><li data-step-index=\"7\" id=\"mv_create_734_8\">Make a well in the centre and crack in an egg into each ramekins.<\/li><li data-step-index=\"8\" id=\"mv_create_734_9\">Place the ramekin's onto a baking tray and bake in the oven till egg is cooked to &nbsp;These took approx 15 mins for a soft yolk.<\/li><li data-step-index=\"9\" id=\"mv_create_734_10\">Season with salt and black pepper.<\/li><li data-step-index=\"10\" id=\"mv_create_734_11\">I served with some
