x-small;\"><span style=\"font-size: x-small;\"><span style=\"font-size: x-small;\"><span style=\"font-size: small;\">Serves 4<\/span><\/span><\/span><\/span><\/strong><\/p>\n\n\n\n<p><\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong><u>Ingredients<\/u><\/strong><\/p>\n\n\n\n<p>2 large carrots, roughly chopped<\/p>\n\n\n\n<p>2 large parsnips roughly chopped<\/p>\n\n\n\n<p>1 large red onion, roughly chopped<\/p>\n\n\n\n<p>2 fresh beets, (leaves removed, scrubbed and chopped)<\/p>\n\n\n\n<p>mixed herbs<\/p>\n\n\n\n<p>salt<\/p>\n\n\n\n<p>2 teaspoons of olive oil<\/p>\n\n\n\n<p>4x42g of Feta Cheese<\/p>\n\n\n\n<p><strong>NOTE: If your fresh beets come with leaves attached, when removed don't throw away as these can be cooked like many other greens as a separate dish<\/strong><\/p>\n\n\n\n<p><strong><u>Method<\/u><\/strong><\/p>\n\n\n\n<p>Preheat oven to 200c of 400f<\/p>\n\n\n\n<p>Add all your vegetables to a large roasting dish<\/p>\n\n\n\n<p>Sprinkle with mixed herbs and some salt<\/p>\n\n\n\n<p>Drizzle over the top with the olive oil and roast in the oven until nice and caramelised.<\/p>\n\n\n\n<p>Serve each portion topped with 42g of Feta Cheese (crumbled)<\/p>\n\n\n\n<p>This is great as a side dish to many other recipes and is also great served on top of some pasta
