It &nbsp;goes with anything or if you are like me, you will eat potato salad just as it is from a bowl.<\/p>\n\n\n\n<p>Skip back a few years and any potato salad I would make would consist of lots of creamy mayonnaise and while I still make it like that, occasionally you want a guilt free version that you don't have to worry about being too high on the calories.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"679\" height=\"450\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-1.jpg\" alt=\"Slimming Eats - Potato Salad - gluten free, vegetarian, Slimming Eats and Weight Watchers friendly\" class=\"wp-image-16144\" srcset=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-1.jpg 679w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-1-300x199.jpg 300w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-1-560x371.jpg 560w\" sizes=\"auto, (max-width: 679px) 100vw, 679px\" \/><\/figure>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>No Mayo Potato Salad<\/strong><\/h2>\n\n\n\n<p>When creating a low calorie version,&nbsp;it was very important that it tastes good, sometimes lighter versions of dishes are lacking something and just don't have that taste you expect and the most important part was getting that kind of creaminess to the dish.<\/p>\n\n\n\n<p>Yoghurt just didn't cut it for me, and neither did quark, but cottage cheese on the other hand, has a much creamier flavour to it when blended.<\/p>\n\n\n\n<p>I am not a fan of cottage cheese as it comes, I think it is those curds that put me off, although I have fast become accustomed to <span style=\"color: #874149;\"><strong><a href=\"https:\/\/www.slimmingeats.com\/blog\/slimming-eats-poutine\">Poutine<\/a><\/strong>&nbsp;<\/span>since moving to Canada and that contains cheese curds, except those ones are cheesy melty goodness.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"680\" height=\"1027\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3.jpg\" alt=\"Slimming Eats - Potato Salad - gluten free, vegetarian, Slimming Eats and Weight Watchers friendly\" class=\"wp-image-16148\" srcset=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3.jpg 680w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3-199x300.jpg 199w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3-678x1024.jpg 678w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3-300x453.jpg 300w, https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2011\/02\/potato-salad-3-560x846.jpg 560w\" sizes=\"auto, (max-width: 680px) 100vw, 680px\" \/><\/figure>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\n<h2 class=\"wp-block-heading\"><strong>Seasoning for Potato Salad<\/strong><\/h2>\n\n\n\n<p>As well as the blended cottage cheese, you need to get a good balance of seasoning and I loved the flavour this potato salad with the addition of some mustard, onion and garlic powder, plus a little granulated sweetener to balance the little bit of tartness from the lemon juice. Erythritol is my first choice of sweetener, mainly because it has no aftertaste and is naturally derived. <\/p>\n\n\n\n<p>If you like pickles, you can swap the lemon juice for a little pickle (gherkin juice) adds a  great flavour. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>How long will  Potato Salad keep in the Fridge?<\/strong><\/h2>\n\n\n\n<p>Once made up, keep in a lidded tub and this should keep for a couple of days.
