medium salmon fillet<\/p>\n\n\n\n<p>2 tablespoons of fat free mayonnaise<\/p>\n\n\n\n<p>couple of tablespoons of juice of lemon<\/p>\n\n\n\n<p>sprinkling of parsley<\/p>\n\n\n\n<p><strong>for the salad:<\/strong><\/p>\n\n\n\n<p>Romaine Lettuce (or other variety of your choice)<\/p>\n\n\n\n<p>Chopped cucumber<\/p>\n\n\n\n<p>Chopped fresh cherry\/grape tomatoes<\/p>\n\n\n\n<p>Chopped up gerkin<\/p>\n\n\n\n<p>couple of tablespoons of sweetcorn<\/p>\n\n\n\n<p>Frylight or Pam Olive Oil spray<\/p>\n\n\n\n<p>Salt and pepper to season.<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Method:<\/span><\/strong><\/p>\n\n\n\n<p>Rinse your salmon fillet, and pat dry.<\/p>\n\n\n\n<p>Place on a board or plate and season both sides with some salt and black pepper.<\/p>\n\n\n\n<p>Place a skillet or frying pan over a medium heat and spray with Frylight or Pam olive oil spray.<\/p>\n\n\n\n<p>Add the salmon fillet and cook until slightly golden on both sides, don't over cook as you want the salmon nice and moist.<\/p>\n\n\n\n<p>In the meantime, place the mayo, lemon juice and parsley in a bowl and mix together thoroughly.<\/p>\n\n\n\n<p>Arrange your salad on a plate.<\/p>\n\n\n\n<p>Top with your pan fried salmon fillet and a finish off with a couple of dollops of your mayonnaise.<\/p>\n\n\n\n<p>A yummy and very quick lunch or main
