Add the onion and garlic and cook until softened.<\/li><li data-step-index=\"1\" id=\"mv_create_435_2\">Add the carrot and red bell pepper and cook for a further 3 mins.<\/li><li data-step-index=\"2\" id=\"mv_create_435_3\">Add passata, tomato paste, stock, balsamic vinegar, and Italian seasoning.<\/li><li data-step-index=\"3\" id=\"mv_create_435_4\">Bring to the boil, then reduce heat, cover and simmer until sauce reduces and thickens.<\/li><li data-step-index=\"4\" id=\"mv_create_435_5\">Preheat oven to 160c fan, 180c, 350f or gas mark 4<\/li><li data-step-index=\"5\" id=\"mv_create_435_6\">In the meantime slice the aubergine into slices (not too thick)<\/li><li data-step-index=\"6\" id=\"mv_create_435_7\">Add to a colander and rinse with water, sprinkle with a little salt and pat dry<\/li><li data-step-index=\"7\" id=\"mv_create_435_8\">Place on a baking tray lined with parchment, spray over the top with spray oil and bake until softened (approx 20-30 mins)<\/li><li data-step-index=\"8\" id=\"mv_create_435_9\">Raise temp to 180c fan, 200c, 400f or gas mark 6<\/li><li data-step-index=\"9\" id=\"mv_create_435_10\">Spray a lasagne dish with some olive oil spray<\/li><li data-step-index=\"10\" id=\"mv_create_435_11\">Line the bottom of a square ovenproof dish with half the vegetable mix, then half the aubergine slices in a layer.<\/li><li data-step-index=\"11\" id=\"mv_create_435_12\">Then top with 3 sheets of lasagne.<\/li><li data-step-index=\"12\" id=\"mv_create_435_13\">Add the remaining vegetable mix, the rest of the aubergine slices and then the final 3 sheets of lasagne.<\/li><li data-step-index=\"13\" id=\"mv_create_435_14\">Set the dish aside while you make the topping.<\/li><li data-step-index=\"14\" id=\"mv_create_435_15\">Place a small saucepan over medium heat, add the milk, mix the cornstarch with a little cold water and add this into the milk with the mustard powder.
