cup of brown (wholegrain) rice<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">half a butternut squash, peeled and roughly chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 tablespoons of balsamic vinegar<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 tablespoons of tomato puree<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">200ml of beef stock<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">paprika<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">fresh basil and parsley<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Frylight or Pam spray<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"text-decoration: underline;\"><strong>Method<\/strong><\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Preheat oven to 200c or 400f<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Get your Balsamic vinegar, paprika, stock and tomato puree ready to cook with.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0754.jpg\" alt=\"DSC_0754\" title=\"DSC_0754\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Place the chopped butternut squash in a roasting tin, spray with frylight or Pam spray and a sprinkling of paprika, and toss to coat.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0747.jpg\" alt=\"DSC_0747\" title=\"DSC_0747\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Place in the oven and roast until caramelised and softened.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add your \u00be cup of rice to a saucepan filled with 2 cups of boiling hot water<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0736.jpg\" alt=\"DSC_0736\" title=\"DSC_0736\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Bring to a boil, then reduce heat right down, cover and simmer until water is almost absorbed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prepare all your chicken and veggies, so they are ready to start cooking with.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0749.jpg\" alt=\"DSC_0749\" title=\"DSC_0749\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Spray a frying pan with Frylight or Pam spray, add the chicken, a little black pepper and cook until it starts to go golden.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0752.jpg\" alt=\"DSC_0752\" title=\"DSC_0752\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Remove from pan and set aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the onion, garlic to the pan and a little of the chicken stock and fry until they start to go golden.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0763.jpg\" alt=\"DSC_0763\" title=\"DSC_0763\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Add the peppers and tomatoes to the pan and cook for a further few minutes.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0764.jpg\" alt=\"DSC_0764\" title=\"DSC_0764\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Return the chicken to the pan with the vegetables, and add the remaining stock, tomato puree and balsamic vinegar and stir to evenly coat. Add the freshly chopped basil and season as required with salt and pepper.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0781.jpg\" alt=\"DSC_0781\" title=\"DSC_0781\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Reduce heat and simmer for about 20 mins, until chicken is cooked through and sauce has thickened.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When you rice has just about absorbed all water and looks like this.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.slimmingeats.com\/blog\/wp-content\/uploads\/2012\/02\/DSC_0782.jpg\" alt=\"DSC_0782\" title=\"DSC_0782\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Leave covered with lid, but turn off heat, the steam will continue to cook the rice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once your butternut squash is ready.
