data-step-index=\"2\" id=\"mv_create_996_3\">Refrigerate for 3 hours.<\/li><\/ol><h4>For the refried beans<\/h4><ol><li data-step-index=\"3\" id=\"mv_create_996_4\">Spray a frying pan over a medium high heat with spray oil<\/li><li data-step-index=\"4\" id=\"mv_create_996_5\">Add the onion and garlic and fry till softened.<\/li><li data-step-index=\"5\" id=\"mv_create_996_6\">Add the pinto beans, cumin, paprika and pinch of cayenne, spray with a little more oil and fry for approx 5 mins.<\/li><li data-step-index=\"6\" id=\"mv_create_996_7\">Add 1 cup of water and start to mash the beans with a masher.<\/li><li data-step-index=\"7\" id=\"mv_create_996_8\">Keep doing this till until beans are well mashed and thicken.<\/li><li data-step-index=\"8\" id=\"mv_create_996_9\">Mix in the chopped coriander and season to taste with salt and black pepper.<\/li><li data-step-index=\"9\" id=\"mv_create_996_10\">Add to a clear glass dish and allow to cool<\/li><\/ol><h4>For the salsa<\/h4><ol><li data-step-index=\"10\" id=\"mv_create_996_11\">Add the tomatoes, onion, jalapeno, lime juice and coriander to a blender or food processor and do a couple of pulses of the blade until it is all finely chopped.<\/li><li data-step-index=\"11\" id=\"mv_create_996_12\">Season to taste with salt and black pepper and cover and refrigerate to allow the flavours to develop.<\/li><\/ol><h4><br><\/h4><ol><li data-step-index=\"12\" id=\"mv_create_996_13\">When the soured cream is ready you can layer the dish.<\/li><li data-step-index=\"13\" id=\"mv_create_996_14\">To the layer of refried beans,<\/li><li data-step-index=\"14\" id=\"mv_create_996_15\">add 1 cup\/240ml of the salsa you made (drain any excess liquid first, you don't want it too runny)<\/li><li data-step-index=\"15\" id=\"mv_create_996_16\">Then top with 1 cup of the homemade soured cream.<\/li><li data-step-index=\"16\" id=\"mv_create_996_17\">Sprinkle with the cheddar and spring onions.<\/li><li data-step-index=\"17\" id=\"mv_create_996_18\">Serve with your choice of things to dip or add a spoonful to the side of one of the suggested main
