So it was a search through the fridge to see what I could find to serve alongside it - bacon, kale, tomatoes and some leftover <span style=\"color: #874149;\"><strong><a style=\"color: #874149;\" href=\"https:\/\/www.slimmingeats.com\/blog\/syn-free-sweet-potato-mash\" target=\"_blank\" rel=\"noopener\">sweet potato mash<\/a><\/strong><\/span>. Perfect!<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Don't have any sweet potato mash on hand? Just pierce a small one with a fork a few time and place in the microwave for about 4-5 mins until softened and then you can just scoop out the flesh and mash and use that instead. Easy!!<\/p>\n\n\n\n<p>This was so quick to make too. Delicious filling breakfasts like this bacon, kale and sweet potato frittata, don't need to take ages to prepare. If you are okay with dairy a little bit of grated cheese is delicious on top, but it is good without too.
