Creamy Garlic Pasta (original version) | Slimming Eats

This recipe is gluten free, vegetarian and Weight Watchers friendly

Ingredients

  • 170g/6oz of spaghetti (can use gluten free)
  • 1 shallot, finely chopped
  • 4-6 small cloves of fresh garlic crushed (if using lazy garlic, half the amount)
  • 4 laughing cow lights
  • 30g/1oz of parmesan
  • 1.5 cups (300ml) of chicken or vegetable stock/broth
  • salt and black pepper
  • Spray oil
  • Freshly chopped Italian parsley

Instructions

  1. Spray a frying pan over a medium-high heat with spray oil.
  2. Add the onion and fry till softened
  3. Add the garlic and fry for another 5 min (add a little bit of the stock to prevent from sticking it also helps to soften the garlic for that sweet garlicky taste)
  4. Season with some salt and black pepper.
  5. Reduce heat to medium
  6. Add the remaining stock, and laughing cow and keep whisking until laughing cow is melted, allow to simmer until the sauce reduces down and thickens, approx. 15 mins
  7. While the sauce simmers, Add the pasta to a saucepan of boiling hot water and cook till al dente, drain.
  8. Stir the pasta into the sauce.
  9. Top with some freshly chopped Italian parsley and the parmesan and serve immediately with a side salad.Enjoy!!

Notes

A healthy serving of laughing cow may vary depending on where you are i.e. US/UK/Canada so be sure to check the one you use and adjust accordingly.

I like a strong garlic flavour when I make this. If you are cooking the garlic enough. It should be a sweet garlicky flavour which is perfect. But if you don't like your garlic flavour too strong I recommended reducing the amount of garlic used.
