Easy Waffle Omelette

Easy  Waffle Omelette

This recipe is gluten free, vegetarian, Slimming Eats and Weight Watchers friendly

Total Time 15 minutes

Ingredients

  • 3 eggs
  • 1/2 cup (120ml) of fat free cottage cheese
  • 1 tbs of chopped white onion
  • 2 tbs of chopped red pepper
  • 2 tbs of chopped green pepper
  • salt and black pepper
  • spray oil

Instructions

  1. Heat waffle iron (I used the medium heat) 
  2. Add eggs and cottage cheese to a blender and blend till smooth.
  3. Mix in the peppers and onion and season well with salt and black pepper
  4. Spray waffle iron with spray oil (make sure you spray both sides)
  5. Pour mixture evenly onto waffle iron, spooning the peppers and onion evenly on each waffle. Don't be tempted to overfill with egg mixture as it puffs up as it cooks. 
  6. Close waffle iron and let it cook for approx 4-5 minutes. Don't try and open iron too soon, or you will result in a mess. The key is to let it doe it's thing.
  7. Enjoy as is with a salad or sides of your choice or add toppings as I have done. (see notes)
