Syn Free One Pot Creamy Garlic Pasta | Slimming World
This recipe is vegetarian, Slimming World and Weight Watchers friendly
Extra Easy - 1 HEa per serving
Green/Vegetarian - 1 HEa per serving
WW Smart Points - 13 per serving
1 small onion, finely chopped
4-6 cloves of garlic, crushed
160g/5.6oz of uncooked pasta
2.5 cups (600ml) of chicken or vegetable stock
4 laughing cow light (1 HEa)
salt and black pepper
fresh chopped parsley
Spray a deep frying pan over a medium-high heat with spray oil.
Add the onion and fry for a minute until translucent.
Add in the garlic and fry just to infuse flavour and then add in a little bit of the stock and continue to fry for a few mins until onions are softened. If the pan dryies out too much add a little more stock.
Add the remaining stock and laughing cow and stir for about 1 minute until melted. Then add in the pasta
Bring to a boil then reduce heat and allow to gently bubble for about 10-12 mins until pasta is cooked and sauce is creamy. (The key is to let the stock reduce down as the pasta cooks, and become lovely and velvety). If the stock reduces down too much and pasta is still slightly under, just add in a little water.
Stir in the parmesan till melted, reserving a little for sprinkle on top.
Season with salt and black pepper to taste
Sprinkle with fresh chopped parsley.
