Ingredients

Instructions

  1. In a bowl add the ground turkey, onion powder, garlic powder, tomato paste, salt, black pepper and egg.
  2. Work together well, then form into meatballs (approx 16)
  3. Spray a skillet over a medium high heat with cooking oil spray, lightly brown the meatballs just for a couple of minutes, then remove and set aside.
  4.  Spray the skillet with more cooking oil spray, add the onion, celery and carrot and and fry for approx 5 mins.
  5. Add the garlic, peppers, and jalapeno and fry for a few more minutes.
  6. Add the spices, passata, tomato paste, sweetener and stock, bring to a boil.
  7. Reduce heat, add back in the meatballs, black beans and corn and simmer for 20 mins. 
  8. Sprinkle with chopped coriander and season with salt and black pepper as needed.
  9. Serve and enjoy!!
