Make these delicious Smore's Overnight Oats the night before, place in the fridge and then they are all ready to enjoy the next day.
Overnights oats are great for when you have little time to prepare something, they are most popular at breakfast but can really be enjoyed anytime of day, the oats thicken in whatever you soak them in, making them extremely filling. I love them for breakfast or a dessert if I have saved my healthy extra b choice for later in the day.
Some of you may be wondering, well what on earth is a S'more? Well up until 2000, I had no clue either, but then at the end of my degree at university, I did a BUNAC summer placement at a Children's Summer Camp in Upstate New York. It was there I was introduced to the famous camp fire treat that is a s'more.
A s'more is basically two graham crackers (which are square shaped biscuits, the easiest way I can describe the taste to someone from the UK, is like a cross between a rich tea and a digestive biscuit). You then stick a marshmallow on a skewer and toast it at the camp fire, once toasted you add a square or two of chocolate (usually hersheys) to one square of graham cracker, add your toasted marshmallow to the top of that and then sandwich together with another graham cracker square and squish down so that the heat of the toasted marshmallow melts the chocolate - divine!!
My kids love S'mores - so I just had to create a S'mores Overnight Oats and this didn't disappoint, it was really yummy.
The s'mores overnight oats were sweetened with Sukrin:1, (a natural sweetener with no aftertaste), you can use any sweetener if you prefer. I then use mini marshmallows, chocolate chips and unsweetened cocoa powder (most are generally around 1 syn a tbs, but check the syn value of the one you use). For the crumbled biscuit, I use a fancy pants brown sugar cookie (which works out as 1.5 syns for 1). I bought these from Costco in the USA and they are soooo good. For those of you who can't get these, try to find a biscuit/cookie that is of similar syn value, you want it around the 30 calorie mark, which is usually 1.5 syn for foods with no free food allowance.

Smore's Overnight Oats
Yield 1 serving
This recipe is Slimming World and Weight Watchers friendly
- Extra Easy - 1 HEb and 5 syns
- Green - 1 HEb and 5 syns
- Original - 1 HEb and 5 syns
- WW Smart Points - 10
- Gluten Free - use gluten-free oats
- 40g (1.5 oz) of oats
- ½ cup (120ml) of fat free vanilla yoghurt (not Greek)
- ½ tsp of pure vanilla extract
- ¾ tbs of sukrin:1
- ½ level tbs (2.5g) of unsweetened cocoa powder - 0.5 syns
- 1 low syn cookie - 1.5 syns
- 10g (0.5oz) of mini marshmallows - 2 syns
- 4g (0.14oz) of chocolate chips - 1 syn
- Add the oats to a bowl, stir in the vanilla yoghurt, vanilla extract, cocoa powder and sukrin:1 (if mixture still seems a little thick, add a little more yoghurt)
- Place half the mixture in a glass
- Add half the marshmallows
- Top with the other half a mixture
- Then add the rest of the marshmallows, the chocolate chips and crumble the biscuit on the very top.
- Place in the fridge and it will be ready for you to dig in a spoon and enjoy the next day.
Syn value of some of the items in this recipe can vary from brand to brand, so ensure you double check the ones you use.
Syn value of cocoa powder can vary from brand to brand. The three brands I use are 100% cocoa powder (not Dutch Processed) and are 1 tbs for 20 calories (1 syn).
You should always double check the syn values of items which are synned, as brands can differ.
