250g of frozen raw shrimp/prawn (defrosted)
2 teaspoons of ghee (or other oil of choice) (4 syns)
2 large ripe vine tomatoes, skinned and finely chopped
1 small onion, finely chopped
2 cloves of garlic, crushed
1 teaspoon of fresh grated ginger
1 teaspoon of mustard seeds
2 teaspoons of chilli powder1 teaspoon of cumin
1 teaspoon of ground coriander
1/2 teaspoon of turmeric
1/2 teaspoon of garam masala
1 tablespoon of tomato paste
1/3 cup (80ml) of water
salt and black pepper
fresh finely chopped coriander to serve
Heat the ghee in a frying pan over a medium high heat, add the mustard seeds
Once they begin to pop, add the onion, garlic, ginger and a little salt and cook until softened.
Add all the spices, mix together well and continue to fry for a few mins.
Add the tomatoes, tomato paste and 1/3 cup of water and simmer until the tomatoes break down into to a sauce (approx 10 mins)
Stir in the prawns and continue to simmer for approx 4 mins, until prawns are cooked through. (add a little more water if the sauce becomes too dry)
Serve topped with chopped coriander and your choice of sides.
