For the cajun spice:
Variation: try swapping the cured pork, for chicken thighs, pork shoulder, or sausage. You could even add in some raw shrimp towards the end of cooking time.
If you don't like spicy food, omit the tabasco and reduce the cayenne to about 1/4 tsp.
