Hawaiian Style Couscous
Enjoy the sweet and savoury flavours of this Hawaiian-Style Couscous, where fluffy couscous meets savoury ham, juicy pineapple, and sautéed veggies. Quick and easy to make, it's a deliciously balanced dish perfect for busy weeknights.
Ingredients
- 1 cup (160g) of couscous (uncooked)
- 1 cup (240ml) of chicken stock
- 1 red pepper, finely chopped
- 1 onion onion, finely chopped
- 8.8oz (250g) of cooked thick ham, diced
- 8.8oz (250g) of diced fresh pineapple
- 1 cup (160g) of canned corn
- 3 green (spring) onions (green part), finely chopped
- chopped fresh parsley (optional)
- salt and black pepper to season
- low calorie spray oil
Instructions
- Spray a frying pan over a medium high heat with low calorie spray, add the onion and pepper and saute for approx 6 mins to soften. Remove from heat and set aside.
- Add the stock to a small saucepan, bring to a boil, add the couscous, stir, turn of heat and add lid and leave for approx 5 mins.
- Add couscous to a large bowl, with sauteed onion/peppers and all other ingredients, season with salt and black pepper and mix well.
- Enjoy!!
