Carrot Cake Oatmeal
Serves 1
  • ¼ cup (60ml) of oats (1 HEb)
  • ¾ cup (180ml) of water
  • 1 carrot, finely grated
  • ½ tsp of vanilla extract
  • ¼ tsp of cinnamon
  • pinch of ground ginger
  • 10g of sultanas (1.5 syns)
  • 1 small apple, grated
  1. Add oatmeal, carrot, vanilla, cinnamon, ginger, sultanas and water to a saucepan.
  2. Bring to a boil over a medium high heat, and simmer until water is absorbed and oatmeal is thick and creamy.
  3. Add to a bowl and top with grated apple.
  4. For a creamier version you can add some milk of your choice from your Healthy Extra A choice
  5. Optional: drizzle with 1 tablespoon of maple syrup for an additional 2 syns.
