Carrot Cake Oatmeal
- ¼ cup (60ml) of oats (1 HEb)
- ¾ cup (180ml) of water
- 1 carrot, finely grated
- ½ tsp of vanilla extract
- ¼ tsp of cinnamon
- pinch of ground ginger
- 10g of sultanas (1.5 syns)
- 1 small apple, grated
- Add oatmeal, carrot, vanilla, cinnamon, ginger, sultanas and water to a saucepan.
- Bring to a boil over a medium high heat, and simmer until water is absorbed and oatmeal is thick and creamy.
- Add to a bowl and top with grated apple.
- For a creamier version you can add some milk of your choice from your Healthy Extra A choice
- Optional: drizzle with 1 tablespoon of maple syrup for an additional 2 syns.
