Hidden Vegetable Beef Meatballs with Dipping Sauce

  • 400g of extra lean beef mince
  • ⅓ cup of finely grated carrot
  • ⅓ cup of finely grated zucchini/courgette (excess moisture squeezed out)
  • ¼ tsp of paprika
  • salt and black pepper to season
  • spray oil
  • 3 tablespoons of soy sauce (tamari or coconut aminos)
  • 3 tablespoons of water
  • ½ tablespoon of maple syrup (1 syn)
  • 1 tsp of sesame oil (2 syns)
  • 1 spring onion, finely chopped
  • sprinkling of sesame seeds
  1. Preheat oven to 200c or 400f (gas mark 6)
  2. Place the beef mince, zucchini, carrot, paprika, salt and black pepper into a food processor and do a few pulses of the blade until all ingredients come together
  3. Roll into meatballs (I did mini ones, but you can make them any size of your choosing)
  4. Place on a baking tray lined with parchment paper, spray over the top with oil and bake in the oven for approx 25-30 mins until nice and golden.
  5. For the sauce, whisk the soy sauce (tamari or coconut aminos), water, maple syrup, sesame oil, spring onion and sesame seeds together in a small bowl and serve along side the meatballs.
  6. I also made up a big bowl of stir fried vegetables, but you can serve with any sides of your choice.
