White Chocolate Chip Oatmeal Cake
Serves 2
  • ½ cup of oats (2 HEb's)
  • 1 tablespoon of coconut flour (1.5 syns)
  • 1 tsp of baking powder
  • ½ tsp of baking soda (0.5 syns for both)
  • pinch of salt
  • 15g of white chocolate chips (4 syns)
  • 3 eggs
  • ½ cup of Greek yoghurt
  • 1 tsp of vanilla extract
  • 2 tablespoons of Maple syrup (5 syns)
  • Spray oil
  1. Preheat oven to 180c or 350f (gas mark 4)
  2. Add the oats to a blender and do a couple of pulses of the blade.
  3. Add to a bowl with the coconut flour, baking powder, baking soda, salt and white chocolate chips and stir to combine.
  4. In a separate bowl whisk the eggs, yoghurt, vanilla and maple syrup.
  5. Add this to the oat mixture and mix till all ingredients are combine.
  6. Grease two oven proof dishes (big enough to hold the mixture) with spray oil
  7. Pour in the mixture evenly and bake in the oven for 30 mins approx, until cakes are lightly golden and a skewer entered into the centre comes out clear.
  8. Serve with your choice of toppings
  9. If you prefer this can be baked in one bigger dish or made into several muffins.
