Watermelon Ice Pops
Makes 10 ice lollies
  • 500g of seedless watermelon, chopped
  • 3 tablespoons of maple syrup
  • ½ cup of plain greek yoghurt
  • 5 kiwi fruit, skin removed
  • 15g of semi sweet chocolate chips
  1. Place the watermelon and 1 tablespoon of maple syrup in a blender and blend until you have a smooth liquid.
  2. Pour this into your ice lolly molds. Make sure you don't fill them past ⅔'s of the mold as you need space for the other two layers.
  3. Add chocolate chips (works out as about 4 per ice lolly)
  4. Place on lid and then pop in all the ice lolly sticks. Place in the freezer and allow this layer to freeze.
  5. Once layer is frozen, remove from freezer, take off lid and then you can do the second layer.
  6. Mix the Plain Greek yoghurt with 1 tablespoon of maple syrup and then add this to each mold, leaving about the same space again for the 3rd and final layer.
  7. Place back in the freezer until 2nd layer is frozen and then remove for the final layer.
  8. Add kiwi fruit to blender with the last tablespoon of maple syrup and blend till smooth, then pour this in to the molds. Once complete, place lid back on and put back in the freezer till frozen.
  9. Once complete, you can remove ice lollies from the molds and I stored them in snack sized ziplock bags, making them easy to just take out of the freezer when requested.
  10. A lovely refreshing and delicious healthy treat in the summer or any time of year.
