Greek Style Quinoa Pots
Serves 2
  • 1 cup of cooked quinoa (I used tricoloured)
  • half a red onion, finely chopped
  • two vine tomatoes, finely chopped
  • cucumber, chopped
  • 84g of feta cheese (2xHEa's)
  • 1 tablespoon of extra virgin olive oil (6 syns)
  • juice of half a lemon
  • fresh chopped mint
  • salt and black pepper
  1. Place all ingredients into a large bowl and carefully toss.
  2. Serve in glasses or pots
  3. Enjoy!!
