Apple and Cheese Quinoa Bites

  • 200g/7oz of cooked quinoa
  • 1 large apple, grated (I recommend using a sweet variety – I used a lady alice) (4 syns)
  • 90g/3ozof reduced fat cheddar (2xHEa)
  • 1 egg, beaten
  • olive oil spray
  • * remember fruit when not in it’s raw form i.e. cooked, blended or pureed becomes syns – refer to your basic syn guide for syn values in you are unsure of syn value
  1. Preheat oven to 180c or 350f
  2. Add quinoa, apple, cheese and beaten egg to a bowl and mix thoroughly to combine.
  3. Form into 12 equal size balls or patties and place on a baking tray sprayed with olive oil spray to prevent sticking.
  4. Bake in the oven until firm and a pale golden colour (approx 30 mins)
  5. Great served with a salad.
  6. You could also add some chives or fresh herbs to the mixture for additional flavour.
