Syn Free Homemade Chicken Bone Broth

Ingredients
  • 1 leftover Roast Chicken Carcass (preferably organic or pastured)
  • 1 handy make-ahead freezer soup bag or 1 onion, carrot, celery and leek, chopped
  • any additional scraps of veg
  • 2 cloves of garlic, crushed
  • ½ tsp of salt
  • 1 tbsp of apple cider vinegar
  • 8 cups/1920ml of water
Method
  1. Set instant pot to saute mode
  2. Add the chicken carcass and veg and brown for about 3-5 mins
  3. Add the salt, vinegar and water and set to manual high pressure for 2 hours
  4. Allow a natural pressure release.
  5. Pour through a sieve into a large bowl and discard of the veg and carcass
  6. Once chilled you can skim of any fat.
  7. Use in soups, stews or casseroles or freeze for another day.
Notes
Slow cooker - low for 12 hours
