Syn Free Bacon, Kale and Sweet Potato Frittata

  • 2 slices of cooked lean back bacon, chopped
  • 3 tomatoes, quartered
  • ⅓ cup/80ml of leftover sweet potato mash
  • ½ cup/120ml of kale
  • 2 eggs, beaten
  • Optional: some grated cheddar from your HEa choice
  • Spray oil
  1. Spray a small frying pan over a medium high heat with spray oil
  2. Add tomatoes and fry till softened
  3. Add kale and cooked bacon and mix well.
  4. Add the sweet potato mash and stir to mix altogether
  5. Add the beaten eggs, season with salt and black pepper.
  6. Add optional cheese to top if using.
  7. Place under the broil (grill) until lightly golden on top
  8. Serve and enjoy!!
