Sultana Weetabix Cake

Gluten Free - use gluten-free oats
  • 3 weetabix (10 syns)
  • 1 tsp of baking powder
  • ⅛ tsp of baking soda
  • ⅛ tsp of salt
  • ½ tsp of cinnamon
  • ¼ tsp of all spice
  • 30g of sultanas - 4
  • ¼ cup/60ml of fat free vanilla yoghurt
  • ¼ cup/60ml (4 tbs) Sukrin Gold - 2 syns
  • 1 tsp of vanilla extract
  • 2 eggs
  • 1 tsp of demerara sugar (or brown sugar) - 1 syn
  • ⅛ tsp of cinnamon
  • spray oil
  1. Preheat oven to 180c/350f (gas mark 4)
  2. Add the weetabix to a bowl, crush to fine crumbs with a wooden spoon or fork
  3. Mix in the baking powder, soda, salt, cinnamon, all spice and sultanas.
  4. In a separate bowl whisk together the yogurt, sukrin gold, vanilla and eggs
  5. Mix this into the weetabix mix and leave for 5 mins, just to soften the weetabix.
  6. Spray an 8inch pan with spray oil
  7. Pour in the mixture
  8. Place in the oven and bake for 25 mins.
  9. While cake is baking, mix together the 1 tsp of brown sugar and cinnamon
  10. When cake is ready
  11. Put oven up to 200c/400f (gas mark 6)
  12. Sprinkle over the top with the brown sugar and cinnamon mixture
  13. Spray over the top with spray oil
  14. Place back in the oven for 5 mins.
  15. Serve with yogurt or your choice of topping.
  16. If you have a few extra syns spare, I like to mix 1 tbs of low fat cream cheese (1 syn with vanilla yogurt)
