Garlic Sesame Carrot and Noodles

Serves 4
  • 250g/9oz of egg noodles
  • 3 large carrots
  • 4 tbs of soy sauce
  • 1 tbs maple syrup (2 syns)
  • 2 cloves of garlic, crushed
  • 1 tsp of fresh grated ginger
  • 2 tsp of sesame oil (4 syns)
  • 2 spring onions finely chopped
  • spray oil
  • tiny pinch of sesame seeds (syns negligible)
  1. Cook noodles according to packet instructions and set aside.
  2. Peel and spiral carrots.
  3. To a bowl add the soy sauce, maple syrup, ginger, garlic and sesame oil, whisk well to combine.
  4. Heat a wok or frying pan over a medium high heat.
  5. Spray with spray oil.
  6. Add the carrot and saute for 5 min, just to soften slightly.
  7. Add the noodles and sauce and mix well to combine and heat through.
  8. Top with sliced spring onions and a sprinkle of sesame seeds.
As you are using just a teeny pinch of sesame seeds as decoration, the syns are negligible when portioned out. So just make sure to only add a small pinch.
