Greek Pasta Salad

  • 150g/5.5oz of fusilli pasta (can use gluten free)
  • 1 cup (240ml) of chopped cucumber
  • 1 cup (240ml) of chopped fresh tomatoes
  • ½ red onion, thinly sliced
  • 90g/3oz of feta cheese, crumbled (2 HEa's)
  • 1 tsp of olive oil (2 syns)
  • 1 tbs of fresh chopped mint
  • pinch of salt
  • pinch of black pepper
  • 1 tbs of maple syrup (2 syns)
  • 2 tbs of fresh lemon juice
  1. Add pasta to a saucepan of boiling salted hot water and cook till al dente (10 mins)
  2. Allow to cool
  3. Add to a bowl the pasta, cucumber, tomato, red onion and feta cheese.
  4. Whisk together in the ingredients for the dressing.
  5. Pour over the salad and mix well to combine.
  6. Divide among two bowls
  7. Enjoyy
Variation: add some cooked chicken
