One Pot Creamy Yellow Zucchini Pasta | Slimming World

This recipe is dairy free, gluten free, vegan, Slimming World and Weight Watchers friendly



  1. Spray a deep frying pan over a medium-high heat with cooking oil spray. 
  2. Add the onion and fry for a couple of minutes until translucent.
  3. Add the garlic and fry for a minute to infuse flavour.
  4. Add the zucchini, pasta, stock, coconut milk, Italian seasoning and parsley.
  5. Bring to a boil, reduce heat, cover and simmer for approx 12 minutes until pasta is cooked through and sauce has reduced down and is silky and creamy.
  6. Season as needed with salt and black pepper.
  7. Enjoy!!


No yellow zucchini? Swap for regular zucchini (courgette)
