Rosemary Roasted Potatoes, Carrots and Onion

Serves approx 2-3 people

Extra Easy – Syn Free

Green -  Syn Free

Ingredients

500g of mini Idaho Potatoes (or new potatoes if you can’t get these)

2 small carrots, peeled and roughly chopped

1 small red onion, roughly chopped

handful of fresh chopped Rosemary

Olive Oil Frylight or Pam Spray

Coarse Sea Salt

all prepared before going in the oven

Method

Preheat oven to 200c or 400f

Spray a roasting tin with some Olive Oil Frylight or Pam spray

Slice potatoes in half, and add to the roasting tin, along with the carrots and onion.

Spray over the top with more Olive Oil Frylight or Pam spray.

Sprinkle with the fresh chopped rosemary and give and good mix to evenly coat all the vegetables/potatoes.

Season with some coarse sea salt.

Bake in the oven till golden.

A great side dish to any meal!!!!
