‘Leftover’ Salad

I had some salmon leftover from this recipe yesterday: Honey, Lime and Chilli Salmon. I also had some leftover roasted new potatoes.

So I put the new potatoes in a bowl, mixed with some extra light mayo, added some chopped spring onion and two cold boiled eggs, which made it into a yummy potato salad.

Then I served the salmon and potato salad, with some mixed romaine leaves, chopped apple, cucumber, red onion and then topped it with a HEa portion of cheese.

The result was a yummy and very quick lunch.
