Homemade Tomato Pasta Sauce
Slimming Eats Recipe
Green – syn free per serving
Extra Easy – syn free per serving
Original – syn free per serving
1 onion finely chopped
3 cloves of garlic, crushed
1 large carrot, finely chopped
2 sticks of celery, finely chopped
240ml of passata
400g of fresh tomatoes, skinned and chopped (or a 400g tin of chopped tomatoes)
2 tablespoon of tomato paste
400ml of vegetable stock
some fresh basil and parsley, chopped
splash of balsamic vinegar
olive oil spray
Place a large saucepan over a medium heat and spray with olive oil spray.
Add the onions, celery and garlic and cook until softened.
Add the carrots and cook for a further 4-5 mins.
Add the remaining ingredients, Bring to the boil and cover and simmer for approx 1 hour (if reduces down too much, just add a little more stock)
Blend until smooth
You can put this into portion size tubs and freeze to use when needed or store in an sealable jar in the fridge.
