I recently started sharing my food pictures on Instagram. I have found it really helps to keep me motivated and on track, so thought I would revert to posting my food diary on here. I am going to do them as a weekly post and add to it each day, so be sure to come back and check.

Monday 7th April 2014
BREAKFAST
- 2 eggs fried over mini butternut squash and zucchini hash browns
- (grated zucchini and butternut squash, fried until lightly golden in rings on a pan, then carefully flipped, keeping the rings in place, crack eggs over the top and continue to cook on a low heat until eggs are cooked to your liking, you can put a lid over the top of pan if you prefer a firmer yolk)
- mini homemade sausage patties
- pineapple and strawberries
- cup of tea
LUNCH
- 2 Chicken sausages and cheddar salad
- Homemade Louisiana Remoulade Dip
DINNER
- Chicken breast stuffed with broccoli, onion, celery and squash
- Sweet potato fries
Tuesday 8th April 2014
BREAKFAST
- Mushroom and Cheddar omelette
- Sliced Pear
- cup of coffee
LUNCH
- Grilled Paprika Chicken Breast - (chicken breast was flattened down with a rolling pin and was sprayed with olive oil spray and coated with smoked paprika, salt and black pepper and then pan fried)
- Mixed Greens, red onion and grapes
- Homemade Light Ranch Yoghurt Dressing
DINNER
- Sloppy Joes meat only
- Sauteed Turnip Greens - saute 2 cloves of garlic in 1.5 teaspoons of extra virgin olive oil, add the turnip greens . I used a large bag of chopped turnip greens. Toss to coat, add 1-2 tablespoons of coconut aminos (or soy sauce) and season with salt and pepper. Add lid and cook on a low heat for about 2-3 mins and they are done.)
- Roasted butternut squash with Paprika

Wednesday 9th April 2014
BREAKFAST
- 2 Homemade sausage patties
- Fried Egg
- Leftovers Hash - (leftover turnips greens, roasted butternut squash, broccoli, onion and celery, roughly mashed and pan fried)
- Fruit Salad
- Cup of coffee
LUNCH
- Leftover Sloppy Joes meat only
- Pear Salad with a homemade dressing and a little parmesan - ripe pear sliced and mixed with some mixed greens, for the dressing, whisk 2 teaspoons of honey , 1 tablespoon of balsamic vinegar and 1 teaspoon of olive oil and a little juice from a fresh lemon (which is enough dressing for 2 people) I also grated over a little parmesan
DINNER
- Ginger and Garlic Hake Fillet - (Hake fillet pan friend, seasoned with salt and black pepper, removed from pan and then add two tablespoons of coconut aminos or soy sauce, 1 crushed clove of garlic and a little fresh ginger and heat for a few minutes, pour over the hake fillet)
- Roasted sweet potato and spiralled zucchini mixed with turnip greens
Thursday 10th April 2014
BREAKFAST
- Omelette Breakfast Pizza
- Fruit Salad
- Cup of tea
LUNCH
- Rustic Tuna and Squash Patties - some mashed steam squash, mixed with a tin of tuna, drained and some sauteed onion, plus 1 egg yolk, roughly mix ingredients to combine and form into patties, bake on a parchment lined baking tray until golden)
- Mixed salad with a drizzle of balsamic vinegar and extra virgin olive oil
DINNER
- Chicken and Orange Crispy Salad - (cooked chicken, mixed with some crispy salad leaves, orange slices and cheddar)
- Sesame Soy Dressing - (2 teaspoon of sesame oil, 2 tablespoons of coconut aminos or soy sauce, and 1 tablespoon of rice vinegar) - serves 2
Friday 11th April 2014
BREAKFAST
- 3 Homemade sausage patties
- Tomato Sauce - passata cooked with onions, garlic and a little balsamic vinegar
- Sauteed Mushrooms
- Fried Egg
- Cup of tea
LUNCH
- Chocolate Chilli
- Mixed Salad with Sliced Apple
- Cheddar
- Homemade Balsamic Dressing - 2 tsps of extra virgin olive oil, mixed with balsamic vinegar) serves 2
DINNER
- Lamb Curry
- Sauteed Shredded Brussel Sprouts
- Dollop of fat free Greek Yoghurt
- Coriander
Saturday 12th April 2014
BREAKFAST
- American Style Pancakes
- Mixed Berries
- Maple Syrup
- Cup of tea
LUNCH
- California Roll Sushi, I was at the mall and it looked so good.
DINNER
- Lamb and Vegetable Curry
- Roasted Sweet Potato
- Dollop of Greek Yoghurt
Sunday 13th April 2014
BREAKFAST
- 2 Homemade sausage patties
- 2 fried eggs
- Mushrooms
- Plum Tomatoes
- Cup of tea
LUNCH
- Chicken Salad- (cooked chicken, crispy lettuce, apple, orange, cheddar)
- Homemade Balsamic Dressing - whisk 2 teaspoons of honey , 1 tablespoon of balsamic vinegar and 1 teaspoon of olive oil and a little juice from a fresh lemon (which is enough dressing for 2 people)
DINNER
- Barbecue Chicken - chicken thigh seasoned with smoked paprika, salt and black pepper
- Roasted Butternut Squash with Paprika
- Asparagus
