Breakfast Omelette Pizza

Method
  1. Season the beaten eggs with salt and black pepper
  2. Spray a frying pan with olive oil spray and pour in the egg mixture. You want quite a thin layer, so use a larger frying pan if needed. Once lightly cooked on one side, carefully flip over and repeat.
  3. Transfer to plate, top with the homemade pasta sauce, sausage and mixed greens
  4. You can also use a healthy extra serving of cheese for a topping if you prefer.
