Chicken Butternut Squash Coconut Curry Soup (Instant Pot)

Ingredients
  • 600g of cubed butternut squash
  • 1 onion, finely chopped
  • 1 carrot - finely chopped
  • 1 leek, finely sliced
  • 2 cloves of garlic, crushed
  • 1 tsp of fresh grated ginger
  • 1.5 tbsp of curry powder
  • 720ml (3 cups) of homemade chicken bone broth (or chicken stock)
  • 2 cups of shredded cooked chicken or turkey
  • 1 cup/240ml of coconut milk - 7.5 syns
  • Salt and black pepper
  • freshly chopped Coriander
  • Spray oil
Method
  1. Set Instant Pot to Saute Mode
  2. Spray with some spray oil
  3. Add the onion, garlic, ginger, carrot and leek and fry for 5 mins to soften.
  4. Add in the butternut squash, curry powder and broth (stock)
  5. Set to manual - 15 mins high pressure
  6. Once cooked, open valve for a quick pressure release.
  7. Put soup into blender and blend till smooth
  8. Add back to the instant pot
  9. Set to saute mode
  10. Add in cooked chicken and coconut milk
  11. Stir till heated through (approx 5 mins)
  12. Season to taste with salt and black pepper
  13. Serve topped with fresh coriander
Notes
Syns in light coconut milk vary from brand to brand, so make sure to double check the syn value of the one you use.

Stove top: Saute veg as directed in instructions, add butternut squash, curry powder and stock bring to a boil, then simmer for 30 mins, blend then add chicken and coconut milk and simmer till heated through, season as needed.

Variation: Add more chicken and vegetables and serve with rice for a yummy curry
