Roasted Butternut Squash with Paprika

  • 850g of butternut squash cubed
  • 1 red onion, finely diced
  • 2 tsp of paprika
  • 1 tsp of salt
  • ¼ tsp of black pepper
  • spray oil
  1. Preheat oven to 200c/400f (gas mark 6)
  2. Add cubed butternut squash to bowl
  3. Add in onion, paprika, salt and pepper and toss to coat.
  4. Spray with spray oil, toss again and give another little spray
  5. Spread out on a baking tray lined with parchment.
  6. Bake in the oven for 40 mins, the squash should be nice and caramelized.
