Chicken and Sweetcorn Lasagne
Serves 4
  • 400g/14oz of cooked shredded chicken
  • 1 cup (240 ml) of frozen corn
  • 2 cloves of crushed garlic
  • small bunch of fresh Italian parsley, finely chopped
  • 4 tbs of low fat cream cheese (4 syns)
  • 2 cups (480ml) of chicken stock
  • 1 tbs of cornstarch (1.5 syns)
  • approx 9 oven-ready lasagne sheets (can use gluten-free)
  • 1 cups (240ml) of passata
  • 1 cup of chicken stock
  • 2 tbs of tomato paste
  • ½ tsp of garlic powder
  • ½ tsp of onion powder
  • splash of balsamic vinegar
  • 1 tbs of maple syrup (2 syns)
  • salt and black pepper
  • 60g/2oz of parmesan (2xHEa's)
  • 60g/2oz of cheddar (2xHEa's)
  • spray oil
  1. Preheat oven to 200c or 400f (gas mark 6)
  2. Add the cream cheese, garlic, 2 cups of chicken stock and parsley to a deep frying pan oven a medium high heat.
  3. Keep whisking until cream cheese melts into the stock.
  4. Mix cornstarch with a little water to make a paste
  5. Add into the sauce and keep whisking till the sauce thickens.
  6. Then stir in the cooked chicken and sweet corn and set aside, season as needed with salt and black pepper.
  7. Add the passata, tomato paste, 1 cup of chicken stock, garlic powder, onion powder, balsamic vinegar and maple syrup to a pan and simmer over a low heat, until it reduces down in a tomato sauce. Season as needed with salt and black pepper.
  8. Spray an ovenproof lasagne dish with some spray oil
  9. Line the bottom of the dish with lasagne pasta sheets.
  10. Then spoon on half of the creamy chicken/sweetcorn mixture.
  11. Add another layer of pasta sheets.
  12. Spoon on the other half of the creamy chicken/sweetcorn mixture
  13. Then add a final layer of lasagne sheets.
  14. Spoon on the top the tomato sauce and smooth other.
  15. Sprinkle with the parmesan and cheddar.
  16. Place in the oven and bake for approx 30 mins untl cheese has melted and is golden.
  17. Serve with your choice of sides.
