Dinner in less than 30 mins
I haven’t updated with any new recipes for the last week or so, as I have been rather busy and living off lots of salads with the weather being so nice. But I thought I would do a quick post tonight, just to show you how quickly you can put together a SW friendly dinner.
I had some chicken breasts to use up, so seasoned them with a barbecue mix (which consists of Garlic, Onion, and Mustard Powder, Salt, Chilli, Black Pepper, Cumin, Paprika, Oregano and some natural liquid smoke flavouring, all of which I combined together in a small bowl. The natural liquid smoke I bought in a while back, it come in a little bottle and is free on SW, I just added a tiny drop of it, to the seasoning to give the chicken a lovely flavour).
I cooked some jacket potatoes in the microwave for 8 mins and then cooked them for the remaining time in the oven at 200c or 400f just to crisp up the skin. The chicken breasts where cooked on a grill pan with some Pam spray.
I then served my chicken and jacket potatoes, with a nice mixed salad of baby romaine leaves, cucumber, red onion, beetroot, grapes, and a couple of tablespoons of croutons (the variety I used are 1.5 syns for 2 tablespoons) and then also a drizzle of fat free ranch dressing (1 syn for a tablespoon).
All of the above was done in less than 30 mins.
