Chickpea, Egg and Kale Tray Bake – an all on one tray simple protein-rich meal that you can enjoy for any meal of the day.

Another tray bake!!!! I know, I know, the tray bake recipes just keep on coming. sorry I just can’t help it.

I love that I can throw some ingredients on a tray, bung it in the oven and not have piles of different pans and dishes to clean up afterwards.

and hey if that alone doesn’t convince you to try this Chickpea, Egg and Kale Tray Bake. Trust me when I say this is really delicious and filling.

One challenge for you is trying to see if you can get a little bit of everything on your fork all at once. It’s heavenly. 

Sweet tangy coated chickpeas with onions and peppers, against the soft yolk of perfectly cooked eggs, kale and crispy crunchy whole wheat toast. Yum!!

What about 1/3 speed foods in this Chickpea, Egg and Kale Tray Bake?

Don’t worry, there are plenty of healthy speed foods in this recipe – kale, peppers onion. But feel free to add any other veg to the tray bake that you think might compliment the dish.

Mushrooms or courgette (zucchini) would also be great additions. 

I just went with what vegetables I had at the time and what I thought would compliment all the flavours.

Chickpea, Egg and Kale Tray Bake

Chickpea, Egg and Kale Tray Bake

Yield: SERVES 2
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Chickpea, Egg and Kale Tray Bake - an all on one tray simple protein-rich meal that is you can enjoy for any meal of the day.

Ingredients

  • 250g (9oz) tinned chickpeas, drained
  • 1/2 red pepper, diced
  • 2 tbs of tomato paste
  • 1/4 cup (60ml) of water
  • 1 tbs of maple syrup - 2 syns
  • 2 tsp of paprika
  • 1/2 tsp of oregano
  • 1/2 tsp of onion powder
  • 120g of low-calorie​ wholemeal bread - 4 slices, sliced into triangles (2xHEb)
  • 4 eggs
  • 4 cups of chopped kale, hard stems removed
  • 2 spring onions, sliced
  • salt and black pepper
  • cooking oil spray

Instructions

  1. Preheat oven to 200c/400f (gas mark 6)
  2. Line a large baking sheet with parchment paper.
  3. Add the chickpeas to a bowl with the tomato paste, water, maple syrup, paprika, oregano and onion powder, Mix till all combined.
  4. Scatter the bread triangles onto the parchment lined tray and spray over the top with cooking oil spray.
  5. Spoon the chickpea mixture onto clear areas of the tray. Scatter the chopped red pepper onto the top of the chickpeas.
  6. Place in the oven and bake for 10 mins.
  7. Remove tray, flip over slices of toast.
  8. Crack the eggs onto the tray (you may need to clear a big enough space for each egg)
  9. Then spread the chopped kale out on the tray evenly and scatter with the spring onion
  10. Spray over the top of the kale and toast again with cooking oil spray.
  11. Place back in the oven and bake for 10 minutes, or until eggs are cooked to you liking.
  12. Season well with salt and black pepper.
  13. Serve and enjoy!!

This recipe is vegetarian, Slimming World and Weight Watchers friendly

  • Extra Easy - 1 Syns and 1 HEb per serving
  • WW Smart Points - 4 per serving

different types of bread may cook faster in the oven, so time may need to be adjusting accordingly.

want some heat? add a pinch of cayenne pepper to the chickpeas
