Breakfast Quiche

Slimming Eats Recipe

Serves 4

Extra Easy – 1 HEa and 0.5 syns per serving

Ingredients

  • 8 turkey breakfast sausages (2 syns) *
  • 2 onions, sliced
  • 2 ripe tomatoes, sliced (I used Roma’s)
  • 3 large potatoes, grated and dried of moisture
  • 6 baby bella mushrooms, sliced
  • 350g of fat free cottage cheese
  • 4 eggs
  • 120g of cheddar cheese (4xHEa’s)
  • Frylight or Pam spray
  • salt and black pepper
  • Fresh parsley

NOTE*  – The sausages I used where quite thin and small and work out as 0.5 syns for 2, so a bigger Pork sausage at around the 0.5 syn value each should be enough. In which case you would reduce the amount to just 4 sausages.

Method

Preheat oven to 200c or 400f (gas mark 6)

Spray a baking sheet with some Frylight or Pam spray, add your grated potato and bake in the oven until lightly golden. (once potato is cooked you can reduce the oven to 180c or 350g (gas mark 4)

In the meantime, spray a frying pan over a medium high heat with some Frylight or Pam spray add you sausages and cook till lightly golden. then remove from pan, carefully slice in half lengthways and return back to the pan to cook the sliced sides until slightly golden.

Remove from pan, roughly chop and scatter on the bottom of a quiche dish.

Add the mushrooms and onion to the frying pan and fry until softened.

Add these to the top of the sausages

Once potatoes are ready, you can then add these to the top of the onion and mushrooms

Add the cottage cheese and eggs with a little salt and black pepper to a blender and blend until smooth.

Pour the mixture over all your layers in the quiche dish and carefully tip the dish from side to side to move the mixture evenly around the dish.

Top with the grated cheese and tomato slices

Place in the oven and bake until set and golden on top. Top with a little fresh chopped Parsley

This is great served for Breakfast (made the day before), Lunch or Dinner

You can serve with some sautéed spinach or grilled/tinned tomatoes or a mixed side salad. The choice is yours.

    tried this and was disappointed, didnt taste like quiche at all, more like a breakfast casserole.

    it sure can, but you would either need to syn the sausages, leave them out or use a vegetarian alternative.

    Made this for breakfast this morning and used some Linda McCartney vegetarian sausages to keep it free on Green… it was lovely… another winner :)
