Baked Ham and Egg with Sweet Tomatoes

Slimming Eats Recipe

Serves 2

Extra Easy – 1 HEb and 2.5 syns per serving

Original – 1 HEb and 2.5 syns per serving

*NOTE – if using sweetener instead of sugar, then deduct 0.5 syns per serving. You can also use part of your HEa for the cheese which would then reduce the syns further to syn free when using sweetener or 0.5 syns per serving if using sugar, but because each serving has less than a full HEa, be sure to have the remainder of your HEa elsewhere in the day.

Ingredients

for the baked ham and egg:

2 eggs

2 thin slices of ham (off the bone)

28g of reduced fat cheddar (approx 4 syns, various brands will vary, so be sure to check syn value)

for the sweet tomatoes:

a dozen cherry tomatoes, finely chopped

1 shallot, finely chopped

some freshly chopped parsley

a little bit of juice from a fresh lemon

splash of balsamic vinegar

1 teaspoon of sugar (1 syn) or use sweetener if you prefer

for the crispy toast:

4 slices of wholewheat bread (2x57g/2xHEb’s)

Frylight or Pam Spray

Method

For the baked ham and egg:

Preheat oven to 180c or 200f

Get two ramkin dishes and add a slice of ham to each one, pushing it down so that it acts like a kind of cup.

Crack an egg into each dish and then top with your cheese

Baked in the oven till cheese is melted and egg is cooked to your liking (approx 15 mins)

For the sweet tomatoes:

Mix all the ingredients for the sweet tomatoes  in a bowl.

 

For the crispy toast:

Toast you slices of bread lighly in the toaster, you want it still a bit soft, as it will toast more in the oven.

Cut in half diagonally and then using a bread knife, slice through each slice inbetween the toasted outside, so that you now have 16 half slices of bread instead of 2.

Spray a baking try with some Frylight or Pam Spray, and place your bread on the tray (soft side down) then spray over the top of the bread, place in the oven and bake until crisp. Keep an eye on them though as they brown quickly.

Serves you baked ham and eggs with some sweet tomatoes on the side and crispy toast. A delicious meal for breakfast or lunch.
