Aubergine, Courgette and Feta Pizza

Slimming Eats Recipe

Serves 1

Extra Easy –1 HEa + 1 HEb per serving

Green – 1 HEa + 1 HEb per serving

Original – 1 HEa + 1 HEb per serving

Ingredients

1 healthy grain Flatout or HEb qualifying wholemeal pitta bread (HEb)

slices of courgette

slices of aubergine

(you need enough of these to layer the top of your pizza)

passata

fresh chopped basil (or dried if you haven’t got fresh)

42g of Feta cheese, crumbled up (HEa)

Frylight or Pam Spray

Method

Preheat oven to 180c of 350f

Place your flatout or pitta bread on a baking tray and crisp slightly in the oven

In the meantime, place a grill pan over a medium heat, spray with some Frylight or Pam spray. (or you can use a George Forman grill)

Season your courgette and aubergine slices with some salt, and place on the grill pan, grilling each side.

Spread some passata over your flatout or pitta bread, add some chopped basil and then layer your courgette and aubergine, then sprinkle over the top with the feta cheese.

Place back on the baking tray and return to the oven for approx 10-12 minutes, until pizza is heated through and base is crisp.
